Tropical Cake

Tropical Cake

2 cups sugar
2 cups flour
2 eggs
2 tsp. baking soda
1/2 tsp. salt
1 tsp. vanilla
1/2 cup chopped nuts
1 mashed ripe banana
1/2 cup coconut
1 tall can crushed pineapple (undrained)

Mix all ingredients in large bowl by hand until well blended. Pour into 9 X 13 greased pan and bake at 350 degrees for 40 to 45 minutes. Cake will spring back when lightly touched in middle when done.

For a special treat, top each serving with Cool Whip!

It's great at barbeques or picnics! And you probably won't have any to take home!!

The nice thing is, since there is no oil or shortening in the recipe, it's fairly low in fat, but it sure doesn't taste like it!

I am making this cake today to serve to our dinner guests tonight.

My son doesn't like coconut (can you imagine?) so I am deleting the coconut and will add diced Marischino Cherries instead.

It'll still have that tropical flair and a bit more color.

I'll let you know what everyone thinks of it.
