Christmas Pudding

Christmas Pudding
6 oz plain flour
1 level tsp mixed spice
1/2 level tsp grated nutmeg
3 oz fresh white bread-crumbs
4 oz shredded suet
4 oz raisins
8 oz currants
8 oz sultanas
4 oz peeled cored chopped apple
3 oz brown sugar
grated rind of 1 lemon
2 eggs beaten
1/3pt strong ale

Grease a 2 pt basin.Sift together the flour and spices.
Add the breadcrumbs,Suet,dried fruit apple,sugar and
lemon rind.Mix well and gradually stir in the eggs and
ale. Stir again thoroughtly.Turn the mixture into the
basin cover with greased greaseproof paper and then
with aluminum foil or a pudding cloth.Either place the
pudding in a pan with water half way up the sides of the
basin and,after bringing it to the boil,reduce the heat
and simmer for 6hrs,or alternatively cook it in a
steamer for 8 hrs. Leave the greaseproof paper in
position,but when the pudding is cool,cover with a
fresh piece of foil or cloth before storing.
Re-boil for 3-4 hrs before serving with fluffy sauce
or brandy butter

I pressure cook mine for 3hrs @15lbs

Limey,
Can I ask a couple of questions..???

If someone were to go to make this pudding,
where would they go to get the suet??
A. Grocery store?
B. Can they substitute anything instead of the
suet if they couldn't find suet in their area??

Just curious..

Hi Weezie ,
You may not like this but sultanas are another tpye of seedless raisins.Suet you can buy from the butchers shop or your meat counter its the fat from around the kidneys.

To be honest, I was thinking the type
of suet, like my mom fed the bird's
in the winter time. [Embarrassed] [dunno] [lala]
Thought a lard or something could be substituted!
[dunno] I didn't know!!!

And you got it,

The raisin's sound ok!!

What would happen if you left the suet out??
Consistancey not the same?? Or does it solidify
up with that stuff??

Yes, the same stuff Mom used to feed the birds,it won't hurt you(puts hairs on your chest)
Don't know what would happen if you left it out or put lard in.Remember where lard comes from.

Hi Weezie,
O K I'll do the Christmas Cake but I'm not getting into the almond paste and icing of it just the RICH FRUIT CAKE.We also made it when the 2 girls got married for the wedding cake.I did the icing for them. I'll type it up.
I guess i could get to Wallys with about a 30 mins car ride from my place.
