*** i haven't made this in 20 years, but it was good way back then!

Pork
Bitter melon (ampalaya)
Egg plant
Tomato
Garlic
Ginger
Onion
Shrimp/fish paste

brown your pork pieces with the onion and garlic. add vegetables cut into serving size pieces and water to cover. simmer until it is all tender.

the more tomato you add, the less bitter it is.

if you don't know what ampalaya is, it looks like a large wrinkly/warty cucumber, very dark green. VERY BITTER!!

Is this a Georgian recipe?

I have never seen ampalaya but will look for it.
