Key Lime Recipes:

Key Lime Salsa

4 medium tomatoes(diced)
1 fresh jalapeno(minced)
1 tablespoon chopped cilantro
1 medium red onion(minced)
1/2 tsp. salt and pepper
1 tablespoon Key Lime juice

In medium bowl,mix together tomatoes,jalapeno,cilantro,onion,salt and pepper;combine well. Add lime juice and chill well before serving

Karens Seafood Sauce

6 tablespoons Key Lime juice
3 tablespoond chili sauce
Dash hot sauce
1 tablespoon prepared horseradish

Mix all ingredients together and chill thoroughly.Serve with seafood.

Baked Key Lime Chicken

1 cup Key Lime juice
2 tsp. honey
2/3 cup water
2 tsp. salt
1/2 tsp. pepper
1 tsp. dried thyme
2 tablespoons vegetable oil(or any oil available)
1 tablespoon fresh ginger
3 lbs. chicken pieces

Place all ingredients,except chicken,in food procesor or blender. Cover and process until ingredients are combined. Pour half the marinade over the chicken and chill overnight.
Reserve the rest of the marinade for basting.
Heat oven to 325 degress.
Drain chicken. Bake pieces in oven 1 hour and 25 minutes,basting with reserved marinade every 20 minutes.

Key Lime Parfaits

3 tablespoons unsalted butter
3 tablespoons sugar
1/2 cup graham cracker crumbs
1 can sweetened condensed milk
1/2 cup Key Lime juice
1 tablespoon grated lime peel
1 cup chilled whipped cream

Melt butter in heavy small skillet over medium heat. Mix in sugar and stir until bubbling,about 1 minute. Mix in crumbs;stir until color deepens,about 3 minutes. Turn out onto plate and cool.
In large bowl,mix condensed milk,juice and peel to blend(mixture will thicken). Beat mixture until firm peaks form. Fold into lime mixture.
Place 1/4 of mixture into 8-10 ounce wine goblets. top each with 1 tablespoon crumb mixture,then 1/4 cup mixture. Top with whipped cream and crumbs.

Just a couple of recipes,in honor of your new Key Lime Tree!

oh wow ^.^ this is my first time in this forum lol. I suck at cooking [Razz] Well i can make stuff as long as i have instructions right in front of me [Smile] But that means paper near a fire... and that don't mix well lol. My boyfriend knows about that [Big Grin]

My lil tree kinda lost all of its buds and a lot of its leaves >.o so that sucks. But its on my mom's back pourch, so it should start producing new buds ^.^ I tried breaking open and tasting the inside of the new pods right after the flowers came off of em though! Tastes just like a lime! I'm so excited that i grew one! But i'll be sure to try out all of those! Luckily the computer happens to be in the kitchen [grin]
