We planted quite a few different types of peppers this year and I was wondering what kinds could be dried. Also, I was needing to know how to dry peppers.

Thin skinned peppers dry better with the method that RugbyHukr suggested. You will probably get better results slicing thick walled peppers and drying in the oven at a low temperature setting or using a dehydrator.

I dehydrate and or hang them and freeze..all the methods suggested are good. jv that is a new one, works good heay?

I have also roated on a regular ole BBQ but be sure to stay upwind of the hot ones or your eyes will pay the price.
My parents have also roasted peppers in the oven but the smell stays in the house for days.

They also freeze exceptionally well and then are so ready to use in recipes. I just throw hot peppers in a bag and I cut bell peppers in thirds or fourths (along lines) and remove the seeds and pop them in a bag. Last a couple years.

I think I will try freezing, hang drying, dehydrating and roasting to see which way we (us and our birds) like the best. They will mainly be for the birds, they love peppers!
