I planted my first herb garden last year and it was wonderful! My sweet basil bushed were so large and big producers....however, not knowing really how I should prepare them for winter, I cut them back and heavily mulched them. Did I mess up? I have brushed the mulch away from the large stalks...but no green! should they come back or will I have to replant....and put them inside for the winter?

I grow several basils every year, I especially love opal. I live in zone 5 where basil is considered a tender annual, so I overwinter mine indoors. I am unsure for your zone, but you may have to do the same. Here is a link you may find helpful: growing basil

Yes, you probably should take it in for the winter if you have freezing temperatures as basil won't survive. Choose a nice plant and prune it back before digging it and placing it in a pot. Then set it in a sunny window or under lights for the winter.
