Diane and I were discussing this the other night in the CH, and Merme had also expressed interest in the recipe, so here it is. It's really easy, and a great side dish!
Potato Kugel
6 medium potatoes (2 1/2 lbs.) 1 1/2 tsp. salt 2 eggs 1/4 cup matzoh meal 1/4 tsp. pepper (though my mom adds just a bit more) 1 large onion
Grate potatoes and onion - using a hand grater or food processor. Add the remaining ingredients and mix well. Pour into greased 1 1/2 qt. baking dish to bake at 375* for 1 hour or until crisp. Serves 6-8.
It's very easy and tastes great! Now that we've been discussing it, I'll be getting more potatoes next trip to the store so we can have some here!

'hm, I might have to do some investigative shopping as I've not seen matzoh meal for sale up here, though I am familiar with it from down home.
It sounds so yummy!
And are you also going to post the other one with noodles and vanilla pudding?

Merme - the matzoh meal used to be sold in boxes, now it is sold in round, tall, cardboard cans - the first time I was looking for it a few years ago and couldn't find it, I didn't realize that all the companies had changed the packaging!!!
I think I'll let Diane post the noodle pudding recipe, as the one she sent me is the same one that I have in my cookbook.
