This was dinner tonight and it was so yummy. I just kinda threw it together so no measurements. Feel free to add or take away and make it your own.

Steam a 1/2 of a spaghetti squash in the oven. I did this by placing water in a pan with the squash face down on it. Add water and cover with foil. Bake at 350 for an hour.

Fry up some chicken, no coating on the chicken and set aside.

In oil you fried the chicken in, saute onions, garlic, hot peppers, fresh basil, oregano and fresh tomatoes. Once all of this is cooked, add in the chicken to simmer for a bit until the squash is done.

Serve the squash on a plate and cover with the chicken mixture. Enjoy!

It was yummy Angie. Lots of spice which I love. It would be as good in mild form with bell peppers.

A variation with italian sausage.

Fry up some italian sausage. After it is cooked, slice it into pieces. Add onions, garlic, peppers, basil and squash that is cut into pieces) Add about 1/4 cup of water. Cook until squash is tender. Add tomatoes and stir together until hot. Put over pasta and cover in cheese.
