2 cups White cornmeal
1 teas. baking powder
1 med. onion, chopped fine
1 cup milk (more if needed)
4 Tbsp. Shortening, melted
1/2 teas. salt
2 eggs, well beaten

Mix all ingredients to the consistancy of a very thick pancake batter. Drop by rounded teaspoon into hot deep fat. Fry until golden brown. Serve hot.

Yield: 8 to 10 hush puppies

Sorry I didn't get to it sooner. I don't have a scanner and would have been afraid to put this book into a copier anyway. it's over twenty years old and I wouldn't want it to fall apart on my watch lol. So I very carefully kept the pages open while I hand wrote each recipe down in my own recipe book (plain old 1 inch binder with college rule paper). That's what took so long. Now that they are in there and I can lay my own book open I'll get more and more of them posted. There are some that look like they are to die for. Really, really yummy.

Yes definitely. I love bacon grease. Well my gallbladder doesn't but the rest of me does.
