What can I do with a large container of grape tomatoes that are a bit past their prime (a little squishy), but not ready to be thrown out?

There's really not enough to make a sauce, but is there anything else I can do with them? I hate to waste them.

Harvest the seeds? No huh. I wonder if they can be sun dried. I bought some sundried tomatoes at the store this month and used some of them in my turkey noodle soup. They were wonderful. For some reason they tasted sweeter than tomatoes that had been refrigerated. More like they taste right off of the vine. Failing that possible you could add them to a slow cooker stew. I usually throw a 15 oz can of tomatoes in mine and that sounds like about the amount you have.

If you will be having a salad anytime soon...you can chop them up in a vineagrette..so, you don't actually need as many as if you were going to throw them in the salad...

Garnish tuna salad with them....

really you could use them to garnish about anything in your meal...I like pretty food!

Great ideas! Thanks!

Weezie - would you happen to know where that salsa recipe is in the archives? A couple of servings is probably all that these are good for...

You could also brush them with olive oil and roast them along side a few garlic cloves and you'd have a great base for a roasted tomato soup.

Great idea, Christina!

Weezie - that recipe looks good, and easy.
Too bad I don't have 1/2 the ingredients - looks like a trip to the store is in order!

I used the Celebrities, only because it's a good tasting tomato..
and I like a acidity flavor
*non~sweet*
But those grape tomatoes are just as good for flavor...
And I used the Roma for the meat of the tomato.
And I used the Jalapeno, cause I grow them,
but you can use any hot pepper...I think..
*if you like it spicey*

And I have to use the Franks Red Hot, and the black pepper, and the Hunts Tomato Sauce,
and the vinegar to open up the pours in your
mouth.. *for full heat effects*

But it's just a little bit, not a whole recipe
for canning 20, 12, 20 jars...

Grape or cherry tomatoes are wonderful sliced in two for pasta dishes, especially with the smaller pasta shapes like farfalle (butterflies) or penne with other vegetables and/or chicken. Yes, you can dry them..we do that in our dehydrator, but you can also do it in a very low oven. We use them for snacking when it's snow-infested and the garden is covered by glaciers.

Cheers,
Julianna
