Does ANYONE have a good recipe for tomato preserves? I've misplaced my favorite prize-winning recipe book for canning and preserving and I've got SUCH a hankering for tomatoe preserves on toast!

heres one for you injoy. 5 cups tomatoes juice and all. 1/2 teaspoon salt.Rind of 1 lemon plus the juice. 2 packages Pectin. 7 1/4 cups sugar. get a pan of hot water dip in tomatoes just long enough loosen the skins. peal tomatoes and chop or mash em up. Measure tomatoes packed in the cup.add lemon juice and rind add salt and place all into large sauce pan. add pectin and bring to a boil. Add sugar and bring to a full rolling boil for 4 minutes. Skim and pour into jars. your friend in gardening.mike57
