I have a corn plant (that is adored by my boyfriend). I have moved it indoors for the winter. On the smaller of the 2 stalks, the leaves have been turning brown and are dying. I realize that the problem is the humidity level being too low, and I have fixed the problem. Will the growth come back in the spring?

not if it is the lower leaves that have died. they won't come back. you can however, cut the top 2/3 of the plant off, and stick it in the soil thereby minimizing the bare stalk. the benefit to this is two fold. one the plant looks better and two, you will get new plants growing from the stalk (leave it in the pot... it'll leaf out if the top is gone)
