easy eggnog pound cake & easy eggnog

NO Cook Eggnog

1 1/2 cups half and half
1 cup egg substitute>>(I use egg beaters)
1 cup Vanilla Bean Icecream
2 Tbls spoons Sugar
1 Tablespoon Pure Vanilla Extract
1/2 tspoon Fresh Ground nutmeg
1/4 tspoon Cinnamon
1/2 tspoon Imitation Rum extract>>(Or use the real thing!! [lala] or bourbon! [lala] )< dble the amount called for if using the real thing
Please omit if serving children [shocked]
Place all ingredients in a blender and cover
Blend 1 minute or untill well mixed
Makes 4>1cup servings> finely grate nugmeg on top. serve immediatley [muggs]

EASY>>Rum eggnog bundt pound cake

Preheat oven 350 F oven
Grease Bundt pan with butter flavored crisco

1 Box Yellow cake mix
1/2 cup sliced almonds
1/2 tsp ground nutmeg
2 TBLspoons rum OR 1 Tblspoons Rum extract
2 eggs
1&1/2 cups dairy bought eggnog
1/4 cup melted butter

Press almonds into bottom of greased bundt pan
Mix all other ingredients well for 5 minutes
Pour into the bundt pan
bake @ 350 for 50-60 minutes or untill toothpick inserted comes out clean
cool ten minutes an invert onto a plate

Options for topping..
1. Dust with powered sugar
2. Make a glaze with powered sugar and Rum or rum extract and a 'splash of water' make fairly runny and brush over cake with a pastry brush
3. Serve warm with Vanilla Bean Icecream on slice of warm cake sprinkle icecream with finely grated nutmeg [thumb]

Diane, you are killing me with your awesome recipes. [thumb] I have been looking for a really good egg nog recipe for years and yours sounds like a winner. I have tried several in the past but was disappointed. And that Rum Eggnog bundt cake recipe, whew, I'm hungry. Will definitely copy both recipes. Thanks again!

your Welcome Stephanie!! I like the Nocook eggnog for when company shows up last minute I start keeping all ingredients on hand starting on Thanksgiving it Nice to have and mix up a five minute job and company always wants more!! think it might be the rum in it [lala] [muggs] I really like using the spice rum !

Well I am going to make the cake for family dinner tomorrow night. Dan's parents will be over so that will be nice.

Going to leave out the run since the kids will be eating it though. I even have egg nog ice cream to go with!

HMMM YUM Triss eggnog icecream will be perfect with it!!! just sub the 1 tbls rum extract for vanilla extract!! [thumb]

I was thinking the same. Kids would not care for the taste of rum, have tried baking it into a cake before with less than thrilled kiddos.

I will be making your Rum Eggnog bundt pound cake Christmas eve to serve Christmas day! I got some vanilla bean Eddy's ice cream to serve with it! Sounds dee-lish! Should be a smash, will let you know!

angelblossom, wow, what a great dessert! Everyone loved it. I used pecans in place of almonds and drizzled a bit more rum [Big Grin] to top of bundt cake. Thanks again!
