These are my favorite two recipes.

Cucumber Lunch

Take 10 large cucumbers(discard seeds), 4 onions.Chop these up(1/2 inch pieces)and sprinkle with 1/4 cup salt. Cover and let rest for 3 hours. Then rinse very well over and over to get rid of residue.

Boil up 4 cups vinegar, 2 lbs white sugar, 1/2 cup flour, 1 tsp tumeric and 1 tsp dry mustard in pot. Add cucumber mix and cook for 1/2 hour. Bottle up and process.

Easy Pickles

Take 3 cups chopped onions, 3 lbs cucumbers(sliced thin), 2 medium green peppers, 1 red pepper(sliced or chunked. Mix and cover with 1/2 cup salt overnight.

Rinse well. Boil up 4 cups sugar, 4 cups vinegar, 2 tsp tumeric, 2 tsp mustard seed, 1 tsp celery seed. Add pickles and boil for 3 minutes. Bottle up and process.
