Homemade Sausage

2 lbs ground pork
1 teaspoon sage
1 1/2 teaspoon slat
1 teaspoon black pepper
1 teaspoon red pepper or 1/4 teaspoon cayenne pepper

Mix & blend everything together. Shape into 2" patties. Fry until crisp and brown on both sides.

Yields 16 to 18 patties

I think it is best to let the mixture sit in the refrigerator for 24 hours to let the flavors really blend in but that's just me.

My dad says it's all in the sage lol. I guess now I can find out for myself.
