Spoonbread

1 cup yellow cornmeal
2 cups boiling water
3 Tbsp Butter
1 teas. salt
3 lg eggs, beaten well
1 cup milk

Slowly add cornmeal to the boiling water, stirring constantly until thick and smooth. Add butter and salt and cool to lukewarm. Then add eggs & milk. Beat for 2 minutes, pour into a greased casserole and bake in a preheated 375F oven for 35 minutes or until golden brown. Spoon out while piping hot.

Yield: 8 servings
