canning winter veggies

Seeming that I am very new to this gardening thing and now canning thing,
anyone have any ideas of what i can grow/harvest in the winter to eventually can? [Embarrassed]

I'm somewhat new to the forum, and I'm curious as to what the fruits and veggies posts will be like in the winter when people can't grow the summer edibles.
I like the fruit and veggie gardening topic best.

do you like beets or asparagus? I've never canned winter vegetables but it will be interesting to read all the ideas. I've just recently put out a few squash seeds to see what happens. A friend at work says she does this and has squash until the ground freezes.

maybe i should try that! i planted a squash plant late, and my husband just tilled it up w/everything else that had finshed blooming. guess i will start again, augh! LOL

Shari,
Find yourself some books by ELIOT COLEMAN
and BARBARA DAMROSCH....
Do a Google search on them..
They are awesome gardener's, entrepreneurs,
4 season gardeners... with books, tv series, and a thriving business under their belts..

They have 2 books, Four Season Harvest and
Winter Harvest Manual. (He's also got another one called The New Organic Grower too)
She's got a couple of gardening books too...

Let's put it to you this way, if something happened to the worlds' food supply...
This is the couple I would like to have as neighbors.... they truly utilize everything...
root sellars, cooking, storing, freezing..
Unbelievable..

They garden in Maine too, and use moveable greenhouse's to grow stuff...
