Ok, so I thought poppies would be really low maintenance, and they are, until recently. I planted these from seed, and they grew almost two feet tall, but now they are "falling?" in the center of the bed. Basically, I have a big bald spot in the center of these lovely flowers because many of them headed away from the center. It looks like something was dropped in the middle of them, which I'm fairly certain has not happened.
Basically, I need to know if I should have trimmed them back, or can I trim them back now?

I believe most poppies do something like that... They are a spring plant, like cool weather... And the hot weather makes them want to go dormant. Mine get tall as you discribed, then flatten out and the seed pods form, I let them dry, cut them off (the seed pods and save, and cut the dying stem back leaving anything green to still collect sunlight for the plant) and usually, during fall time they'll reshoot up a bit. They should be fine, from what you discribed!!

Mine are the other type. I'm not sure if the California ones work the same way??? I do know they reseed themselves/and do not like heat!!
