1 cup olive oil 1 shallot, minced fine pinch of paprika pinch of dried parsley
Pour oil in a microwave safe bowl. Add onion and stir. Microwave for 30 seconds or until oil warms. Remove from microwave and stir in last two ingredients. Cool. Cover and refrigerate. Works best stored in a glass jar with a metal lid. Bring to room temp to serve. Even good on steamed veggies in place of butter.
