Sweet potatoe -pecan Bread

This makes two loaves

Preheat Oven @ 350
Butter(I use butter flavor crisco) and flour 2-- 9x5x3 inch loaf pans

3 cups sugar
3/4 cup veg. oil
1/4 cup applesauce
3 lrg. eggs
2 cups mashed sweet potaoes( or 16oz can also pumpkin can be substituded)
3 cups all purpose flour
1 1/2 tsp ground cloves
1 1/2 tsp ground cinnamon
1 1/2 ground nutmeg
1 tsp baking soda
1/2 tsp salt
1/2 tsp baking powder
1 cup or more [grin] chopped pecans, plus extra on reserve for topping bread

Beat sugar and oil in lrg bowl to blend.
Mix in eggs and applesauce. Sift flour and dry spices, salt, bakingsoda, and baking power 1/2 at a time into mix blend well and sift other 1/2 in.
Stir in pecans
divide batter between 2 loaf pans, sprinkle extra pecans on top and bake 1 hour check by inserting toothpick if it comes out clean take from oven and rest on rack for ten minutes, Then invert pan and rest loaf on cooling rack for another 10 minutes before serving

This bread is wonderful spread with cream cheese [grin]

Oh my goodness Diane, I read your PM and came right here to read this. That looks sooooooo good!!!!

I just checked though and am missing the pecans and sweet potatoes. going to put those on the shopping list and try it soon!
