This one is a house favorite.

What you need:

skinless/boneless chicken breasts
electric skillet
cooking oil
italian seasoned bread crumbs
wheat flour
eggs
pasta noodles (doesn't matter what kind of noodles, any will work)
butter
spaghetti sauce
parmesan cheese

pound the chicken breasts until they are 1/4 - 1/2 inch thick
cover with flour
dip in eggs and cover with bread crumbs
put about 1/4 inch of oil in skillet and set temp to 325 degrees. Cook chicken one side at time until breading is golden and crispy. (should only take up to 5 minutes each side)
place on cookie sheet. cover tops of chicken with spaghetti sauce and mozzarella cheese. Place in oven on low broil just long enough to melt the cheese.

For the pasta, cook and drain, put back into pot and add lots of butter (i use I can't believe it's not butter as a substitute and it still tastes great). Add just enough sauce to taste, so the pasta is barely covered in the red sauce. Sprinkles in a bunch of parmesan cheese and mix. Serve on plate next to the chicken with whatever vegetable you like. I make brussell sprouts with mine because the kids love them with the chicken parm.
