Can I freeze zucchini and yellow summer squash. Do I have to blanch first? OK, let me rephrase that. If I am too hot and lazy to blanch 25 lbs of squash before freezing, what's the worst that could happen? Will it look funny? Is preserving color the only goal of blanching? Because I think I could live with less than vibrant color if it means I won't have to stand over a pot of boiling water in this 100 degree heat. LOL! Will failure to blanch make the food taste bad or make us sick?

I take zucchini and shred it..
*either in one of those Salad Shooters
or a hand one*
and shred them into sandwich size bags...
Squeeze out the air and freeze..

When I want to make some zucchini bread..
I pull out a package or two *depending
how much bread I want to make* and put it
in a strainer.... over a bowl or something...
To thaw and drain the liquid..
Once all of the liquid is done draining...
it's ready to use...

You can slice both and place in a single layer on wax paper in the freezer, when frozen you can then places the slices into a freezer bag. When you want to use some just take out what you want and use it frozen.

I do exactly what Weezie does. Shred for breads! Shredded also works well to use in casseroles and as a veggie in lasagne!

Comfrey and I are on the same page. I also slice and freeze mine.. Don't thaw them before you cook them, as they contain a lot of water!!!!

After I had soooooo many zuke's one year,
I let my oldest sell some in a stand by the
sidewalk here in town..
*gave him a couple of quarters, a little bit of
"people" time, learning how to sell things~if you really want that quarter, annnnnnndd gave him
something to do in the midst of those long, summer vacations that don't seem to end...
*like that happens now when you're a grown up..
I wish I had those long, drawn out summer vac's.*

Have you also checked out our ARCHIVES RECIPE SECTION?????? There should be lot's of zuke recipe's, like Chocolate zucchini cake, and stuff like that...

I also shred my zucchini and freeze it for zucchini muffins. My 6 year old is addicted & begs me to make them. I planted ONE zucchini plant and I shred at least every other day! Gonna have a lot of muffins & breads!
