Here is my recipe for a great appetizer or if you make enough, a great dinner. I usually just toss a bunch of this stuff into a bow, but today paid a little more attention to what went in the bowl.
1 can water chestnuts, finely chopped 3 carrots, finely chopped 1 onion, finely chopped 5 garlic cloves, finely chopped a couple of shakes of ginger a couple of shakes of white pepper soy sauce, enough to make everything moist 1 1/2 pounds of hamburger
Mix all of the above together. Cut egg roll wrappers in half. I used 1 full package today. Put a line of the hamburger mix along one of the long side of the wrapper and roll. Seal with a bit of egg wash and place on a well-greased cookie sheet. Bake at 300 degrees until browned.
Serve warm. My kids like to dip these in sour cream.

Hey Triss, These sound tasty! I think I might like to try dipping them in sweet and sour sauce. I'm always loooking for good appetizer recipes.

Sweet and sour would be really good. If you add more ginger and white pepper they are nice and spicy! You can also substitute sausage for the hamburger for a change.

Since I'm not eally a BIG sausage fan, I'll probably stick with the hamburger, but thanks for the idea!
