Hi Francine,

No it isn't a family recipe. I got it from the Airforce. I used to love to go to the Airforce NCO Club and order it. So when I learned to cook that's one of the things I learned.

okay, I too ave a very good cordon bleu recipe....
[muggs] [muggs] [muggs] [muggs] [muggs]
2 boneless/skinless chicken breasts( cut in half and pounded flat with a mallet)

4 slices of black forest ham

4 slices of swiss or provelone cheese

1 pkg. of frozen spinach thawed & cooked---OR 1-2 cups of chopped fresh broccoli(this is how my family likes it) cooked

bread crumbs to roll in

place ham on chicken, cheese on ham, broccoli or spinach on cheese( a small amount so it will roll up)

fold sides in so goodies wont escape and roll.

roll in bread crumbs--no need to soak 'em cause they are already wet enough to hold crumbs

place in a hot pan with melted butter to lightly brown, keep checking to brown on all sides.
(keep in mind, these soak up butter well, so keep pan lubricated under chicken)

place in baking pan to finish cooking in oven on about 350 for maybe 30-40 minutes or until heated through. [grin]
