Christmas Bread

1/2 Cup dried fruit chopped
1/4 Cup Cherry Koolaid Sweetened
1 1/2 cups flour
1/2 cup whole wheat flour
1 tsp salt
1 1/2 tsp baking powder
1 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground cloves
3/4 cup sugar
1 stick butter
2 eggs
1 tsp vanilla extract
1/2 cup nuts (optional)

Soak the dried fruit in the cherry koolaid overnight.

Preheat oven to 350 degrees F. Grease a 9 X 5 inch loaf pan.

Mix together the dry ingredients. Cream the butter and beat in the eggs. Stir this mixture into the dry ingredients. Do not mix more than necessary. Gently stir in the vanilla, fruit & nuts if used.

Pour the batter into the loaf pan and bake for 45 to 60 minutes, until nicely browned. A toothpick inserted into the center of the bread will come out fairly clean when it is done. Cool on a rack for 15 minutes before removing from the pan. To store, wrap in waxed paper.

Serve warm with butter. Yummy!

Re: koolaide I mixed it up first and added my own sugar.

Re: dried fruit. The combination I had was pineapple, peaches, cranberries and the like. It was suppose to be snack food [not]. Nothing had a rhine on it that I could see. But then I don't see so good lol.

Dried not candied. Usually candied fruit is used in fruit cake. It's sweeter and harder when it is baked. At least I think so lol.

Thanks Weezie hope you enjoy it. I just finished mine today and it is so good with a little cream in the bottom of the bowl and butter on top of the bread warmed up.

You will notice that the bread has a slight pink cast but it isn't enough to make it look anything other than brown like a light spice bread. Sorry.
