I picked some wild blueberries on my property today;so i decided to make some blueberry muffins. There are hundreds of blueberry muffin recipes out there. I would love to see how other people do theirs!
In the muffins i made this evening i used a non-fat bananna flavoured yogurt.


Mom's Blueberry Muffins

2 eggs, slightly beaten
1/2 cup margarine, melted
3/4 cup sugar
One 8 oz. cup yogurt ( plain , lemon, bananna, etc)
2 1/2 cups flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1&1/2 cups blueberries

Preheat oven to 375 degrees.
Beat together eggs, butter, and sugar. Stir in yogurt.
Add dry ingredients until just blended.
Fold in blueberries. Spoon batter into muffin tins.
Bake 20 min. Makes 12 muffins.
