Bread & Butter Pickles

4 quarts sliced cucumbers
6 medium onions, sliced in rings
3 cloves garlic (peeled)
2 green bell peppers, sliced in rings

Sprinkle 1/3 c pickling salt over the above and cover with ice for 3 hours.

Drain and add:

2 Tbsp mustard seed
1 1/2 tsp celery seed
1 1/2 tsp tumeric
5 c sugar
3 c cider vinegar

Pour over cucumbers, onions, garlic & peppers, stir and cook in large roaster pan until cucumbers and peppers are done. I usually cook these 15-20 minutes after they come to a boil. Stir often. Pack in hot jars and seal.

I have a real easy Bread and Butter Pickle recipe, but you don't can them, just store in the fridge.

Microwave Bread-and Butter Pickles

2 cups cucumber, sliced in 1/4 inch-thick rounds
3/4 cup onion, sliced in rounds
1 cup sugar
1/2 cup white vinegar
1 teaspoon canning salt
1/2 teaspoon mustard seed
1/4 teaspoon each celery seed & turmeric
Mix all ingredients in a 2 quart microwave-safe bowl. Microwave on high 7 to 8 minutes, stiring twice, until cucumber is crisp-tender and onion is translucent. Ladle into glass jar
(rinsed with hot water to prevent cracking). Cover, cool slightly and refrigerate. Makes
2 1/2 cups.

Weezie, the salt we use is in the spice section, in a box (green if you buy Mortons brand) like you would get ice cream salt. I think it is even the same size as that.

Yes, the wide mouthed canning jars and canning lids. I have a ton of regular jars for making jelly, but the wide mouthed canning jars were better for pickles, especially when you go to get them out of the jar!
