A "fool" is just whipped cream that you can add any flavor or fruit to. It makes a very rich dessert so make the servings very small. It can be served with cakes or beside pies for added flair.

2 teaspoons mint flavoring
1/2 cup confectioners' sugar
1 cup heavy cream, very very cold
alittle bit of cream for mixing purposes

mix 1/4 cup sugar with the mint flavoring and enough cream to make a thick sauce texture.

Beat the remaining cream with the remaining sugar adding the sugar slowly until the mixture holds a soft peak. Beat the mint mixture into the cream mixture place in individual cups garnish with mint sprigs and serve. Or you can refrigerate for up to an hour before serving.
