Hi!

I'm vegetarian (but will eat cheese and eggs, or even seafood- I don't want to be TOO serious about it!) and would love to hear any good soup, main dish or side dish recipes which contain no meat. I've been a very lackadaisical cook during my 45 years, but suddenly find myself interested in learning more. I have veg cookbooks, but I'd like to find things that please both the vegs and the carnovores. We're having thanksgiving here this year, and while my husband enjoys cooking a turkey (he has a great BBQ recipe I ought to post), I would like to make an alternative dish that everyone might like.

Hey Bess,
Hi ya!!
If you can follow any of my recipes for soups,
(I'm bad, I just throw it in and never measure)
but all of those are no meat.
There is beef boullion but it's basically salt.
I am almost a total vegan too!!
I'll eat the meat, only if I cook it....
I never eat meat, out, only a chicken BBQ..
I don't 'consider that meat, I mean red meat!

Any of the, I think I did 3 soups, have no meat....
I do lasgna for me with just cheese...
I do make it with meat for the rest of the house, but my side has just cheeses and sauce and noodles.
At Easter I do a ham and a 3 way lasnga.........
And each year, I have to make the cheese side bigger, because a couple other family members
like it now too!

Either main or side dishes, Weez. Basically, I'm looking for meatless things I can make that the carnivores won't snub as "rabbit food". Maybe something the veggos can have as a main dish and the meat-eaters can try on the side. I had this rather nice recipe a long time ago for some kind of casserole with rice and cheese and vegetables and maybe eggs, too. [dunno] Something like that?

Ah! I forgot about My Mom's Spinach Souffle! It's unbelievably easy and impresses everyone with it's fine flavor.

EASY SPINACH SOUFFLE

10 oz. box of Frozen Chopped Spinach, thawed & squeezed dry
3 or 4 eggs
6-8 oz. soft cream cheese
nutmeg
1 can cream of mushroom soup

Beat eggs. Beat in soft cream cheese and blend.
Add sprinkling of nutmeg.
Add spinach. Beat.
Add mushroom soup to blend.

Grease bottom only of round glass oven dish.
Put in 425 degree oven for at least 10 minutes,
then bake at 350 degrees about 30 minutes more until puffy and golden brown.
