THis is one of my fav's we had it at thanksgiving dinner last weekend and it was a huge hit. So I thought I'd share. However I've been making so long I don't use measurements anymore. I usually do it by taste.
2 medium yams, boiled and mashed mix in 1 egg and Brown sugar (a cup or so depending on how sweet you like it) give it a tast test to see if its right.
Topping
Equal parts brown sugar and flour, some melted butter or margrine with a cap of vanilla flavouring, a few shakes of cinnomon and nutmeg. An sometimes walnuts,
Sprinkle toping evenly over mashed sweet potaos and bake at 340 for about 20 mins.
And thats it is really easy and so many variations
